In our research projects and consulting commissions we address the challenges facing the food industry throughout the value chain – from resource production and food processing through to retailing and final consumption. We explore the food science, economic, health and social aspects of each issue and ensure that our output is directly relevant to practice.

Food Processing

The specialism unites professionals with extensive expertise in food engineering, food science, microbiology and biotechnology. We research and develop cutting-edge process technologies and new process and product concepts, and optimise existing processes.

Food Business and Consumption

The specialism brings together experts in marketing, consumer behaviour, innovation and food business. By conducting nationwide surveys and experiments we study the behaviour of consumers with regard to new trends and technologies. We also advise clients on marketing, innovation management and food business issues.

Sensory Evaluation

Our consulting services deploy a wide range of methods. We conduct consumer tests as a means of investigating product acceptance, willingness to pay and other factors. We also perform objective descriptive sensory evaluation in order to identify the best ways of meeting consumers’ needs and wishes. New scientific insights are always taken into account and acted on. This enables us to provide our clients with comprehensive support.

Food Value Chain

By cooperating with selected research units of BFH-HAFL’s Agriculture Division we are in a position to address the entire value chain from field to fork. Cooperation with BFH’s Health Department further broadens our scope to encompass food and health aspects.
